Star Biscuits
It seems to have become a bit of a tradition that around this time of year I make Star Biscuits. Last year I made them for our flat warming party, this year I made some for a colleague’s 30th Birthday. I think these would be perfect for a New Year’s party or get together. This recipe makes delicious, almost-shortbread like biscuits that are always enjoyed by my friends and family.
For The Star Mixture:
250g unsalted butter (at room temperature)
125g caster sugar
1 egg yolk
1 tsp vanilla extract
300g plain flour, plus extra for rolling out
100g dark chocolate, for dipping
edible sprinkles, to decorate
Takes about 2 hours | Makes about 30 stars
1. Put the soft butter, sugar and vanilla extract into the mixing bowl and beat with a wooden spoon or electric mix for about 2 minutes until creamy, smooth and fluffy.
2. Add the egg yolk to the butter mixture and beat for a minute. Add the flour and mix in with a wooden spoon at first and then with your hands to make a ball of dough.
3. Divide the dough in half and shape each piece into a flat disc about 3cm thick. Wrap in clingfilm and chill for about an hour until firm. While waiting line 2 baking trays with baking paper. Towards the end of this time preheat the oven to 180°C/fan 160°C/ gas 4.
4. Sprinkle a little four on the worktop. Unwrap one piece of dough and roll out with a rolling pin until slightly thicker than a pound coin. Dip the cutter in flour and cut out star shapes. Space the stars out evenly on the lined baking trays leaving a few centimeters between each one. Gather up the scraps into a ball, then roll out as before and cut out more shapes. Repeat with the other piece of dough.
5. Place in the heated oven and bake for 10-15 minutes until light golden and the edges are just turning light brown. Once cooked, remove the baking trays from the oven and set them on a wire rack. Leave the biscuits until they are completely cold, then lift them off the paper.
6. Gently melt the chocolate and then carefully dip each cooled biscuit into the chocolate. Before the chocolate sets, sprinkle the biscuits with edible decorations.
